Called “the bird of royalty”, squab has been popular amongst members of the French nobility as far back as the middle ages, and enjoyed in cuisines as far back as ancient Egypt. Because of the delicate nature of the dish, squab has remained a status symbol in modern cooking.

The meat of our King Squab is distinctly unlike domestic poultry or wild game birds, it’s dark, moist and flavorful. Squabs possess a characteristic which allows them to retain more moisture during the cooking process than other poultry – the result being a very versatile and easy bird to prepare for large or small groups of people.
