Duck Sausage Barley Soup

Ingredients
- 32oz jar Sauerkraut
- 1 15oz Can Tomato Sauce
- 2 Tbsp Tomato Paste
- 6 Cups Water
- 1 Pkg pelleh Poultry Italian Duck Sausage thinly sliced
- 1/4 cup barley
- 3 tbsp. olive oil
- 2-3 cubed potatoes (optional)

Directions
In a large pot heat oil and sear Italian Duck Sausages 5 minutes until golden brown. Meanwhile rinse sauerkraut in a colander under cold water. Add it to the pot with rest of ingredients. Simmer on low for 90 minutes.
