Infused Duck Fat

Garlic Infused Duck Fat
- Heat oven to 400
- From one head of garlic, peel the outer layers of and wrap in tinfoil with 1 jar of Duck Fat.
- Roast for 40 minutes, or until the cloves start turning a nice golden brown.
- Remove and place into a garlic press.
- Press garlic to release the remaining oils and infuse the duck fat, stir to combine.
- Allow the duck fat to rest and infuse.

Garlic and Thyme Infused Duck Fat
- Heat oven to 400
- From one head of garlic, peel the outer layers away and wrap in tinfoil with 1/2 jar of Duck Fat.
- Roast for 40 minutes.
- In a separate pan, heat the remaining jar of duck fat and add 1 bunch of thyme. Stirring constantly over a low flame, allow the oils to infuse the duck fat. Stir for 5 minutes, let rest.
- Once garlic is done, combine and stir.
- Allow the duck fat to rest and infuse together
